I’ve always read on topics about psychics that they say everyone has their own free will. SO my question is say you have a reading with a psychic and they see this person in your life for over a year from now. BUT that person is very mad at you and decides they don’t want to see you again. Could this change that reading?

Not necessarily. Just because that person is mad at you right now and says or feels that they don’t want to see you again, does not mean that it will stay that way in a year.
